Gesha, Marsellesa, Obata
Mexico · Red de San Miguel Eloxochitlan · Washed
A mix of Gesha, Marsellesa & Obatã varieties, gone through a washed process by Mercedes Galvez Andrés, Fermin Temoxtle Rodriguez & Bernabé Herrera of the producer group Red de San Miguel Eloxochitlan in the Sierra Negra region of Puebla, Mexico.
Red de San Miguel Eloxochitlan is a group of young producers that came together in 2017, investing their savings to renovate 50-year old coffee plantations they inherited from their parents and grandparents. They’ve since joined a program to obtain agricultural equipment, participated in a local field school to improve their processing methods, and submitted coffees to the Puebla of Pride quality competition in 2021/22 scoring among the 30 best coffees in the competition and occupied 6 of the 10 top lots in 2023.

Marsellesa
Costa Rica · Hacienda Sonora · Natural
This Marsellesa variety is picked as whole cherries and laid out on patios to dry. The cherries get covered in the early afternoon when the temperature is hot, then piled up in pyramid-like layers to modulate the temperature throughout the day. Alberto & Diego utilize this drying method to create a balanced and clean profile.
Hacienda Sonora has been in the Guardia family for over 100 years, focusing exclusively on specialty coffee. They grow over 20 coffee varieties and have created several unique processing methods. Investing in their farm early on, the Guardia family focused on improving quality and implementing sustainability measures across the farm. The equipment used on the farm is powered by renewable energy thanks to a water stream turbine. Their care and attention to detail are showcased in the coffees from Hacienda Sonora, making them one of the most progressive farms in Costa Rica.

Recipe:
11g Coffee : 200ml Water @95ºc
Pouring Structure:
First pour: @ 0:00s
- 50g: Circle Pour
- Gentle swirl to soak grounds.
Second pour: @ 0:30s
- 50g: Circle Pour
Third Pour: @ 1:00s
- 100g: Center Pour - Fast Flow
Total brew time: 2:45s - 3:00s.
Conical Dripper
Recipe:
11g Coffee : 200ml Water @95ºc
Grind Size:
Medium
Pouring Structure:
First pour: @ 0:00s (Bloom)
- 50g Circle Pour
Second Pour: @ 0:30s
- 150g Circle Pour
- Light swirl to settle the grounds
Total brew time: 2:00s - 2:30s.
Inverted Aeropress - Longer Steep
Recipe:
11g Coffee : 200ml Water @95ºc
1x aeropress filter.
Inverted method.
Grind Size:
Medium
Pouring Structure:
First pour: @ 0:00s
- 50g: Pour
- Use a spoon to saturate the grounds. (back + forth motion)
Second pour: @ 0:45s
- 150g: Pour
- Use the spoon to break the "crust" that forms
Twist your cap with paper filter onto brewer, and (while still inverted) press out any air until the liquid saturates the paper filter.
Steep until 4:30s.
Flip + plunge gently for 1m.
Total brew time: 5:30s.
