A simple approach, beautiful coffee & quality equipment is the foundation for a successful brew.
Below are some fundamental guidelines that we've found produce delicious and repeatable results.

Resting
Our coffees have a peak flavour window between 2-6 weeks after the roast date.
This 'resting period' is important because it allows the coffee to release gasses that've built up in the roasting process.
In excess, these gasses reduce the amount of flavours and aromatics that make it into your cup. Patience, will result for a fuller expression of the coffee.
Freezing
Freezing is a great way to store coffee that you want to save for later, greatly delaying the staling and oxidation effects.
It's best practice to freeze coffee in sealed bags at their peak expression (4-6 weeks after roast date). Simply tape over the de-gassing valve on our bags before freezing. Coffee can be stored this way for 12+ months.

12g coffee : 200ml water
Filtered water @ 95°c
Timing | 0:00s → 1:00s → 1:30s
Structure | 60ml → 120ml → 200ml

Aeropress
15g coffee : 250ml water
Filtered water at 90°c
Timing | 0:00s → 3:00s
Structure | 200ml → Press
