Coffee Varietal

'H1'

'H1' is a first-generation (F1) hybrid varietal developed in Costa Rica by crossing the parent varietals Sarchimor & Rume Sudan—praised for its compact plant stature, vigorous growth and natural resistance to coffee leaf rust and berry disease. In the cup, it brings a gentle sweetness and soft aromatic complexity—often showing plum nuances and delicate floral hints.

Processing

'Natural'

This is a way of processing coffee where the fruit around the coffee seed remains intact during the fermentation & drying phase. Often turned, sorted & managed carefully to ensure even drying, this process imparts flavours from the coffee fruit into the seed. 

How this coffee was processed:

Ripe cherries are harvested and spread out to dry, as midday temperatures rise, the coffee cherries are piled into pyramid-shaped layers and covered from the sun. This method naturally modulates the temperature of the drying coffee, helping Alberto & Diego avoid “boozy” or off-notes and achieve a clean, balanced profile.

Alberto Guardia shifted his family’s century-old estate into specialty coffee in 1999 by building a micro-mill and developing new processing techniques that emphasize sweetness and complexity. His son Diego joined as co-manager in 2011 and now leads sustainability and innovation projects across the farm.

Hacienda Sonora

Owned by the Guardia family for over 100 years, Hacienda Sonora sits at an average of 1,200 m above sea level at the foot of the Poás Volcano. The farm’s 100 hectares is divided into 55 hectares of shaded coffee trees of more than 20 varietals, 35 hectares of wild forest reserve, and 10 hectares of sugar cane production, preserving the biodiversity of the land and enriching the volcanic soil.
